Chicken with chorizo, peppers and Saffron mash

Ingredients (Serving 4 Portions people):

• 8 bone-in chicken thighs
• 1 tbsp. olive oil
• 225g chorizo, sliced
• 1 onion sliced
• 2 red peppers, sliced
• 2 garlic cloves, sliced
• 200ml rioja
• 200ml chicken stock
• 1 bay leaf
• 4 thyme sprigs, to garnish

For the mash:


• Large pinch of Sun’s Secret Saffron
• 900g floury potatoes, halved
• 80ml milk
• 35g butter
• 5 tbsp. extra virgin olive oil

Chicken with chorizo, peppers and Saffron mash

Introduction:

This magnificent recipe is one of those that make the most regular appearance on your dinner table. The combination of chicken thighs, chorizo, potato, tomato, paprika and saffron, make for a delicious Spanish meal as the nutritious family dinner. “Something Special for a Luxurious supper that Serve with a marvelous Saffron mash”.

Steps to make this especial recipe by the method of Sun’s Secret Kitchen

  • STEP 1:

At first, For the preparation the saffron mash, you should  heat the milk and saffron in a saucepan to just below boiling and then remove from the heat and set aside to infuse.

  • STEP 2:

Heat the olive or vegetable oil in a casserole over a medium heat, then fry the chorizo for 2- 3 minutes and transfer to a dish .

After that, fry the sliced onions and peppers in the pan until starting to soften about 10 minutes.  Then, add the garlic and cook for 2 minutes more and tip into the dish with the chorizo.

  • STEP 3:

Return the pan to a medium heat with some oil and then brown the chicken thighs or breast on both sides.

At this stage, add the rioja, scraping the bottom of the pan to release any sticky bits, then add the stock, bay and thyme.

  • STEP 4:

After that, add the chorizo and veg. Bring to a simmer, then transfer to the oven, uncovered. Cook for 35-40 minutes. (Note that, adding some water if the liquid starts to reduce too quickly).

  • STEP 5:

Meanwhile, make the mash. cover the potatoes in salted cold water, bring to the boil and cook for 15 minutes.

Then, drain & return to the pan. Leave for 5 minutes to steam-dry. Mash the potatoes with the infused milk and butter.

Finally, beat in the olive oil and some seasoning. When the chicken is cooked through, season, scatter with thyme leaves and serve with the mash.
