Creamy Saffron Pasta

- STEP 1:
At first, bring a pan of water to a boil, salt it and then add the pappardelle. Meanwhile chop the shallot.
- STEP 2:
Next, melt the butter in a medium skillet over medium-low heat.
- STEP 3:
Add the shallot and cook for 2 minutes until they start to soften texture about 2 or 3 minutes.
- STEP 4:
Then, turn the heat up. After that, add the wine and let it bubble and evaporate until it has reduced by at least half.
- STEP 5:
Turn the heat down to medium and next, add the cream. Grind some of the saffron together with some sea salt. Add this to the cream mixture along with the remaining threads.
- STEP 5:
At this stage, allow the sauce to simmer until slightly thickened and the saffron color has permeated the cream.
Remove 1 cup of the pasta cooking water, then drain the pasta and transfer it to the skillet with the sauce.
- STEP 6:
Add some of the cooking water and the chopped parsley and toss to coat. Taste the sauce and season with salt and black pepper as you like.
- STEP 7:
Finally, divide the pasta among bowls and top with a sprinkling of pepper or red pepper flakes, if desired.
