Persian Saffron Cake

Ingredients (Serving 16 slices people):

For Cake:
• 5 eggs
• 1 cup sugar
• 1 cup yogurt thick
• 2 tablespoon rose water
• 6 tablespoon melted butter
• 2 teaspoon green cardamom ,ground
• 6 tablespoon olive oil or vegetable oil
• 2 cup all-purpose flour
• 2 teaspoon baking powder
• 3 tablespoon almonds, sliced
• 1 pinch sea salt

For Cake Syrup:
• 1 tsp. Sun’s Secret Saffron
• 1/2 cup honey
• 1/3 cup orange juice
• 2 tablespoon rose water
• 2 tablespoon pistachios, slivered

As a popular dessert, it is the ideal accompaniment to an afternoon tea and is sure to delight any of your family and guests. This magnificent Saffron cake recipe normally sprinkled with pistachios, almond or roses and is always a winner as a golden star.


Steps to make this especial recipe by the method of Sun’s Secret Kitchen

  • STEP 1:

At first, preheat the oven at 350 degrees F. Then combine & mix vegetable  oil and ghee together in a mixing bowl. Next, add the sugar and whisk it all together until be completely creamy and soft.

  • STEP 2:

At this stage, add eggs and whisk it well. After that, add the thick yogurt and again whisk it all together into a fluffy mixture.

  • STEP 3:

Next, add rose water, ground cardamom and stir it in. Sift the almond flour, all purpose flour and semolina flour, one by one and lightly whisk it in.

  • STEP 4:

Sprinkle baking powder all over, add pinch salt and incorporate it very well into the mixture.

  • STEP 5:

Then, pour the cake batter into a greased form cake pan that has been lined with parchment paper in the bottom.

  • STEP 5:

After that, tap the bottom of the cake pan on the kitchen counter to even out the cake batter.  Then, Scatter the almond or pistachio slices all over the cake batter.

  • STEP 6:

You shod bake for 30 to 40 minutes until it is golden surface on the top.

Honey Syrup:

  • STEP 1:

While the cake is baking, prepare the golden & pleasant cake syrup.

  • STEP 2:

Next, combine honey and orange juice together and bring it to a boil.

  • STEP 3:

After that, lower the heat and let it simmer for about 5 minutes.

  • STEP 4:

Then stir in the rose water and ground Sun’s Secret Saffron into the syrup. Turn off the heat and add the pistachios.

Final Steps

  • STEP 1:

Using a sharp kitchen knife and then poke fine holes all over the cake.

  • STEP 2:

At this stage, pour the warm syrup over the warm cake and let the syrup soak in for several hours.

  • STEP 3:

As your taste & favorite, you can decorate with fresh or dried rose petals and more slivered nuts, like pistachio & almond.

Cooking Notes & Tips:

  • Note 1: To make the cake less sweet, using half the syrup and scale it up.
  • Note 2: Adding a pinch of sugar to the Sun’s Secret Saffron is helpful to grind it fine.
