Persian Tahchin with Saffron Chicken: Saffron Rice Cake

Persian saffron rice cake also known as Tahchin with the golden & crispy tahdig, is one of the most popular& loveliest rice dishes in Persian cuisine that is crunchy with a savory layer of baked shredded chicken, veggies or lamb pieces in the middle of saffron rice and is normally garnished with lots of red barberries, pistachios and almond slivers on saffron rice.

Steps to make this especial recipe by the method of Sun’s Secret Kitchen
- STEP 1:
At first, place the chicken breasts in a pot with finely chopped garlic, onion, turmeric, salt, pepper and of course a cup of water.
Then, bring to boil and reduce heat. Cook for an hour on medium -low heat. When cooked, set aside to cool. At this stage, shred the chicken or lamb into your favorite pieces as you like.
- STEP 2:
At his stage, heat butter in a pan and add chicken pieces, saffron and drained barberries into it. Then mix them well. Note that, don’t forget to season & mix them with some salt and pepper.
- STEP 3:
Next, bring 6 – 7 cups of water to a boil in a pot. Then, add the soaked rice and boil for about 8 -10 minutes until the rice grains are soft on the ends and firm in the center.
After that, drain and pour some cool water over it to cool and separate the rice grains. Set the rice aside to cool.
- STEP 4:
Combine yogurt, yolks, oil, salt, pepper and the rest of saffron in a bowl and mix well. Then, add the rice to the yogurt mixture and again combine the ingredients. (note that, be careful & avoid braking rice grains).
- STEP 5:
Next, add 3 tbsp. of olive or vegetable oil in a nonstick cake tin or pan and let move the oil around to cover the bottom of your pan.
Then, ladle 2/3 of the rice in and lay the rice mix on the bottom of the tin.
- STEP 6:
At this stage, pour chicken pieces and other mix evenly in the hole. After that, cover the entire surface with the rest of the rice. You can drizzle some melted butter over the top layer of rice as your preference.
- STEP 7:
It’s better cover with aluminum foil and poke holes into the foil, for this reason that let the steam out. Bake in a preheated oven of 200°C, about 45 minutes to an hour.
- STEP 8:
Once the crust forms, your delicious dish is ready. Enjoy your meal.
Melt the butter in a pan over low heat. After that, add in some barberries and stir until coated with butter. Then, mix & add in sugar, rose water and slivered pistachios or almond (optional/ as you like). Finally stir well and remove from.
