Saffron Ice Cream

Ingredients (Serving 4 Portions people):

• 1/4 teaspoon Sun’s Secret Saffron
• 2 cups whole milk
• 1 ½ tablespoon corn starch or vanilla custard
• A pinch of sea salt
• 2 tablespoons rose water
• 1½ cups heavy cream
• 1 teaspoon vanilla extract ( optional)
• 2 tablespoons pistachios slivered , unsalted

The magical combination of golden saffron, rose water, milk, cream, eggs and pistachios are unbelievable delicious. You really will be love about its wonderful texture and flavor of this Persian ice cream. It’s perfectly soft, smooth and the taste is distinctly saffron and incredibly creamy.


Steps to make this especial recipe by the method of Sun’s Secret Kitchen

  • STEP 1:

First, whisk cornstarch with 1/2 cup milk and stir well until smooth. After that, Pour remaining cups milk and sugar in saucepan.

  • STEP 2:

Add Sun’s Secret Saffron and sea salt.  Then, let saffron infuse in milk about 30 minutes and then bring it to a boil over medium-low high heat.

  • STEP 3:

At this stage, lower the heat and whisk in the corn starch-milk mixture, stirring constantly.

Note that, Simmer until it reaches a thin custard consistency or coats & cover the back of a spoon. Next, take the pan off the heat and let it cool on an ice bath.

  • STEP 4:

Using a small mortar and grind the Sun’s Secret Saffron with a pinch of salt until it is a fine powder. Then, dissolve it in the rose water and let it soak for 15 to 20 minutes.

  • STEP 5:

After that, stir in saffron-rose water, heavy cream and vanilla until well combined.

  • STEP 6:

Chill the mixture in refrigerator for several hours/overnight or over an ice bath.

  • STEP 7:

Freeze the mixture in your ice cream maker according to the manufacturer’s instructions.

Add the pistachios in the end just when the ice cream is starting to set. Check note below about cream chunks.

Cooking Notes & Tips:

  1. Note 1: Persian saffron ice cream often has chunks of frozen cream in it.

To make this, at first, pour heavy cream in a thin layer over a flat plate that has been lined with parchment paper. Then, place the plate in the freezer and let the cream freeze until hard.

After that, break the cream crust into 1/2 inch pieces and add it along with the pistachios.
