Saffron Kabab Koobideh

Ingredients (Serving 8 kababs people):

• ½ teaspoon Sun’s Secret Saffron
• 1 lb. ground lamb
• 1 lb. ground beef
• 1 large onion (or 2 medium onion)
• 1 teaspoon black pepper, ground
• 2 tablespoon olive oil or melted butter
• 2 teaspoon onion juice (optional)
• 1 pinch salt & pepper
• 1/2 teaspoon lemon juice
• ½ teaspoon turmeric
• 2 teaspoon sea salt
For garnish: (Optional)
• Green peppers or hatch chilies
• 4 Tomatoes, grilled
• Red onion, Sliced
• Freshly Parsley, Chopped
• Sumac, ground
• Lemon, Sliced

Saffron Kabab Koobideh: Persian Minced Meat Kebab/ Mutton Koobideh

Koobideh Kabab or Koobideh and Chelo Kabab literally means Saffron rice with kebab, is one of the most popular and immensely classical kebabs in Persian cuisine recipe that featuring skewers of juicy minced meat, grated onions, spices and grilled over hot coals or any barbeque with grilled tomatoes which has amazingly flavorful minced meat kebabs ever.

Steps to make this especial recipe by the method of Sun’s Secret Kitchen

  • STEP 1:

At First, grate finely the onions as possible as and then, put them in a strainer and drain.

We offer, use the blender to purée it even more (Take the onion water completely). Note that, kabab will not hold its shape if the mixture has too much water any way, don’t discard onion water. Reserve it for later.

  • STEP 2:

Next, mix & combine the ingredients in a bowl and mix with your hands until well combined and marinated. Then, massage it about 20 minutes until it will hold its shape better.

  • STEP 3:

After that, allow kabab ingredients to more marinate in a refrigerator in a covered bowl or container with lid approximately about 2-4 hours.

  • STEP 4:

In this step, start and shape the koobideh form on wide skewers . Use one hand to squeeze it onto the skewer and the center of the skewer will be filled with the koobideh mix.

Note that, your koobideh mix should not be bulky. (Eight koobideh Kabab of about 7 to 8 inches).

  • STEP 5:

Next step, start charcoal at least 30 minutes before grilling. Then place koobideh skewers on the grill and they should be propped up over coals or flame approximately about 15-20 minutes.

Note that, turn the skewers every minute to evenly cook. These koobideh cook pretty fast so be careful and keep a close eye on skewers.

  • STEP 6:

To grill tomatoes and bell peppers or other your desired vegetables, it is better to skewer them separately from the kababs and use thinner skewers for them. You can also, brush the vegetables with olive oil or melted butter after skewering.

  • STEP 7:

place the koobideh skewers and cover it with saffron rice, koobideh breads، dough, grilled tomatoes or pepper and other grilled vegetables on your serving dish.

We offer that, sprinkle a little red ground sumac, lemon, chopped onion and parsley on your koobideh. It will be very tasty and of course delicious.

Cooking Notes & Tips:

  • Note 1: Note that, the ends of the koobideh mix on a kebab skewer should not be open at all. So, it’s better use your fingers to pinch the ends of kababsS.
  • Note 2: Take care,the koobideh mix (meat mix) will fall off the skewer if it doesn’t have enough fat on it or has moisture on it or even isn’t mixed thoroughly.
