Saffron Rice Pilaf with Chicken

Will dazzle you! The magic combination of chicken, rice and saffron are always a delicious dish but in this special case it gets a little fancier, more colorful and also nutritious.
It’s infused and flavored with high quality saffron, then tossed with dried fruits & nuts, cashews and herbs to make a magnificent dish.
Instructions:
Steps to make this especial recipe by the method of Sun’s Secret Kitchen
- STEP 1:
At first, wash the rice and soak it for 30 minutes.
- STEP 2:
Add 1 Tb of olive or vegetable oil in a pot. Next, sauté onion, cranberries, raisins, orange zest, pistachios for 10 minutes on a low heat.
- STEP 3:
Add chicken and 1 Tb of mixed spice, turmeric, saffron threads and sea salt, sauté for 5 minutes.
- STEP 4:
After that, put the rice and sauté again.
- STEP 5:
Then add chicken broth and cover the pot with a tight lid.
- STEP 6:
Keep it on high heat for 5 minutes, then turn the heat to lowest and keep the pilaf for 30 minutes or until the rice fluffy and absorbed the liquid completely.
- STEP 7:
Before the rice is completely done around 25 minutes, you can mix saffron threads with rose water and then add them to the rice and cover the pot again.
(Optional):
- STEP 8:
In a skillet, add 1 Tb of ghee, when it’s hot, please, add almonds, pine nuts, cashews and toast them until they are golden brown and drizzle over the rice.
- STEP 9:
Finally Serve the rice with yogurt or your favorite salad.
