  • STEP 1:

First, add olive oil to a skillet over medium heat. Then, add the onion, bell peppers and garlic, cook until onion is translucent.

Next, add chopped tomato, bay leaf, paprika, saffron salt and pepper. Stir and cook for 5 minutes.

  • STEP 2:

At this stage, add white wine and cook for 10 minutes. add salt if needed.

  • STEP 3:

Add chicken pieces, 2 tablespoons chopped parsley and rice to the pot. Cook for 1 minute.

  • STEP 4:

After that, pour the broth slowly all around the pan and jiggle the pan to get the rice into an even layer.

  • STEP 5:

Bring mixture to a boil and reduce heat to medium low. Give the pan a gentle shake back and forth during cooking (just once or twice).

Cook for about 15 -18 minutes (uncovered), then nestle the shrimp, mussels and calamari into the mixture, sprinkle peas on top and continue to cook (without stirring) for about 5 more minutes.

Watch for most of the liquid to be absorbed and the rice at the top nearly tender. Note that, if for your rice is still not cooked, add 1/4 cup more water or broth and continue cooking.

STEP 7:

Remove pan from heat and cover pan with a lid or tinfoil. Place a kitchen towel over the lid and allow to rest for 10 minutes.

  • Note 1: Spanish rice is traditional in Paella that you can substitute medium grain rice or also use pork, turkey, rabbit, chorizo or a combination.

At first, wash the rice in a wire strainer under cold. Once it’s washed and drained, in a saucepan, put the rice.  Then, add water to the pan to cover the rice. Bring the water to a boil, cover the pan and turn the heat to low and cook the rice about 20 minutes.

  • STEP 2:

Next, put the 4 ½ cups water in a separate saucepan.  Then, add the saffron and let it soak for about 15 minutes. After it softens, use the edge of a wooden spoon to crush the saffron and release the yellow color.

  • STEP 3:

Add the cooked rice, sugar and turmeric to the Sun’s Secret Saffron and water and bring it to a boil.

At this stage, add the rose water and cornstarch and let to cook, stirring for about 20 minutes until the pudding thickens and becomes a clear yellow color.

  • STEP 4:

Then, turn off the heat and leave the pudding to cool in the pan about 10 minutes.

  • STEP 5:

Fill your dessert cups or a large serving bowl with the pudding and let it cool to room temperature. Finally refrigerate for several hours.

First, warm the milk in a saucepan with the Sun’s Secret Saffron. Once steaming, take off the heat and whisk in the melted butter, then put in the fridge to chill.

Next, whisk the egg with the sugar until be light and fluffy that will take around 3-5 minutes. Then, add the cooled butter, light brown sugar and whisk to combine. After that, tip in the flour, baking powder and a pinch of salt and combine.

  • STEP 2:

Fold in the white chocolate and ground pistachios, then tip the mixture onto a piece of baking parchment.  Then, roll it up in the parchment into a thick, compact log and twist the ends to make a cracker shape & put in the fridge for at least a couple of hours to chill.

  • STEP 3:

When ready to bake, heat oven and line a baking sheet with baking parchment. Unwrap the cookie log and slice into thick 1cm disks and space out on the sheet and bake for 12-15 minutes until set and golden around the edges, but still soft.

Allow to cool a little, then move to a wire rack to cool completely. Will keep for 2-3 days in an airtight container.

  • STEP 1:

At first, heat the milk, saffron and 1 teaspoon of sugar together in a pot until the milk is steamy.

Then, remove from heat and stir to dissolve the sugar. Let cool or warm to the touch but not hot.

  • STEP 2:

Sprinkle the yeast over the warm saffron-infused milk and let sit for 5 to 10 minutes until be foamy.

  • STEP 3:

After that, mix & whisk flour, sugar, salt, cardamom.

Next, make a well in the center of the flour and add the yeast milk saffron mixture, the eggs, the butter and the sour cream and mix the whole of ingredients until well incorporated.

At this stage, knead the dough. Do this until the dough is a little sticky to the touch but does not completely stick to your hands when you handle it.

Then, let dough rise and place in a bowl and cover with plastic wrap and let sit in a warm place for 1 to 2 hours until the dough has doubled in size.

After that, form dough into S shapes. When the dough has doubled in size, press it down and knead it a couple of times.

Then, break off a piece and form it into a ball about 2 inches wide and roll the ball out into a snake about 14 inches long.

Next, curl the ends of dough in opposite directions and forming an “S” with spirals at each end and place on a lined baking sheet and repeat with the rest of the dough.

  • STEP 8:

Cover with plastic and place in a warm spot until the dough shapes double in size, about approximately 30 minutes to an hour.

  • STEP 9:

Next, brush with egg wash and place raisins on buns. Using a brush or a pastry brush and brush some beaten egg over the tops and sides of the uncooked buns.

  • STEP 10:

Place in the oven and bake at 400°F for about 10 to 12 minutes until the buns are golden brown.
