How Delicious This Colorful Rice ….
Morasa means jewels, because of the pretty appearance it has and is the most flavorful & sweet saffron rice dishes with a lot of heavenly colors. Traditionally, Morasa Polo prepared with rice, saffron, orange peel, raisins. almonds, pistachios, carrots and barberries.
Method:
Steps to make this especial recipe by the method of Sun’s Secret Kitchen
- STEP 1:
At first, leave the chicken along with some salt, turmeric and one onion or 3 garlic and a little water to make whole chicken cooked. After that, dived and remove cooked chicken from their bones and cut into smaller pieces as your favorite.
- STEP 2:
Next, soaked the rice in cold water about 1 hour. Then, fill a large saucepan with water and add the salt and bring it to a boil. After that, add the rice and cook for about 5 – 7 minutes.
Note that, your rice should be soft on the outside and just resistant on the inside, almost cooked solid. In any case, every rice type is different. Drain the rice and set aside for now.
- STEP 3:
Place the raisins in a warm bowl and leave to soak for about 10-15 minutes. Then, drain the raisins and set aside
- STEP 4:
Then, slice the onions and heat with 1 tbsp. of olive oil on medium-low heat and sauté the onions for 3 minutes. Set aside them.
- STEP 5:
Cut the carrots into thin sticks and add a second tbsp. of olive oil and sauté them about 2 – 3 minutes.
In this step, add 1 tsp of sugar, stir and continue cooking for another minute. set aside please.
- STEP 6:
Add the orange peel in saucepan of hot water to boil, simmer for 5 minutes. Then, drain, and set aside.
- STEP 7:
After that, toss the barberries in frying pan with 1 tbsp. of butter and ½ tsp sugar just for a minute. Tip out onto a plate to stop them burning.
Half of barberries, will be for cooking the rice, the other half for topping and decorating.
- STEP 8:
For cook the rice, place saucepan on medium-low heat. Add 2 tbsp. of ghee or butter and 1 tbsp. of Sun’s Secret Saffron. Next, add ladles of the rice and other ingredient on rice and flatten.
In other word, sprinkle half of every other ingredient (Mix of cooked chicken pieces with barberries, raisins, fried onions, saffron and …. etc.) on the list and the remaining half for garnish and decorating.
Add again by the next third of the rice and then second half of the other ingredients. finish off with the final portion of the rice and poke some holes into the rice to allow the steam to come through.
- STEP 9:
At this stage, wrap the saucepan lid up with the towel or rice steamer cover and cook on that low heat for 40-45 minutes. (If you want, cook it for 1 hour for a crunchier tahdig).
- STEP 10:
Finally, Serve Morassa Polo onto a serving platter and scatter all the colorful leftover ingredients all over the rice and mix the melted butter with the rose water and again saffron and sprinkle all over the rice.
For decorating more, you can add pomegranate seeds on your rice. (optional)
