- STEP 1:
At first, mix & combine butter and ground saffron in a bowl and let it reserve.
- STEP 2:
Then, preheat oven and place chicken on a roasting pan with rack.
- STEP 3:
Next, season cavity of chicken with salt and teaspoon pepper, then stuff onion, rosemary, lemon inside the cavity of the chicken.
- STEP 4:
After that, tie the legs of the chicken together (optional). Brush the entire chicken with the golden saffron butter, brushing under the skin of the chicken breast. Then, season the chicken with salt and pepper.
- STEP 5:
Roast chicken for 15 minutes, then reduce heat & roast chicken until meat thermometer inserted into thickest part of thigh registers, approximately 1 hour 20 minutes.
- STEP 6:
Finally, transfer chicken to platter, cover with foil and let stand for 10 minutes, allowing internal temperature to rise.
