Saffron Chicken korma

Ingredients (Serving 4 - 5 Portions people):

• Large pinch high-quality Sun’s Secret Saffron
• 8 skinless chicken thighs
• 1 tbsp. garlic, grated
• 2 tbsp. grated fresh ginger
• 2 teaspoons gram masala
• 2 tbsp. whole milk
• 6 tbsp. vegetable oil
• 3 white onions, sliced
• 2 bay leaves
• 3 green cardamom pods
• 1 clove
• 1 tbsp. ground coriander
• 1/4 tsp chili powder
• 2 tbsp. ground almonds
• 1 tbsp. sugar
• Almond flakes, to garnish
• 1 teaspoon kosher salt

What makes Korma dish marvelous, is certainly the addition of saffron. Saffron lends a floral and heavenly flavor with a savory honey scent. Add saffron to this chicken korma to give it a lovely color and Serve this mild chicken curry as a main course. Serve this mild chicken curry as a popular main course or with rice.

Steps to make this especial recipe by the method of Sun’s Secret Kitchen

  • STEP 1:

First, combine & mix the yogurt with the garlic and ginger pastes in a bowl.  After that, add the chicken thighs, then spoon over the marinade and making sure that the chicken is completely covered.

Cover & chill for 30 minutes. warm the milk in a pan gently. Don’t let it boil, because it should only be tepid as you do not want to scald the saffron.

Then when the milk is tepid, take off the heat and add the saffron and leave to infuse.  Set aside.

  • STEP 2:

Next, heat the vegetable or olive oil over a medium-high heat in a pan and then, add the onions to the pan and fry until golden brown and caramelized about 10 – 15 minutes.

Then, remove the onions from the pan and leaving as much of the oil in the pan. Then place on a plate to drain. After that, spread the onion rings across the plate so they crisp as they cool.

  • STEP 3:

Add the masala to the pan with the oil in. After a few seconds, you can add the ground coriander and continue to cook, stirring.

After about 1-2 minutes, add the marinated chicken to the pan along with the marinade from the container. Keeping the heat on medium-high and continue stirring.

Next, after 5 minutes, when the oil separates from the yogurt and comes to the surface, you can add the chili powder and 1 tsp salt.

Please in this step, lower the heat and cover the pan with the lid and simmer gently for about 35 minutes. The chicken is completely ready when the edges have softened and are slightly curled.

  • STEP 4:

At this stage, remove the pan from the heat. Add the saffron-infused milk, ground almonds and sugar. Stir the chicken gently to avoid breaking it up.

  • STEP 5:

Garnish with the flaked almonds, fried onions and cilantro, if desired. Discard the bay leaf and cinnamon stick.
