Why we all love Saffron Moussaka? A spicy & colorful saffron Moussaka made with thick slices of summer eggplant, a meaty layer of ground turkey, red lentils, tomatoes, zucchini, carrots, topped with sliced potatoes, cheesy yogurt and basil topping and traditionally and completely flavored with saffron, red wine, cinnamon and fresh turmeric.
This unique recipe has so much in common. Loads of flavor, low in meat, high in delicious nutrition and can be made in large batches and frozen to save you time on cooking.

Eggplant Slices
- STEP 1:
At first, slice eggplants and sprinkle with salt. Then, at least, place in a colander for half an hour (allowing water to drain away).
- STEP 2:
After that, drizzle eggplant with olive or vegetable oil and layer on a baking sheet.
- STEP 3:
Then, broil eggplant until they are starting to brown.
- STEP 4:
Next, remove from the heat and set aside.
Meat Layer
- STEP 1:
Add olive oil to a skillet and heat over medium heat.
- STEP 2:
Cook onion until soft and before adding ground turkey, zucchini and carrots. Then, cook turkey through and add red lentils and tomatoes.
- STEP 3:
After that, toss in the garlic, turmeric and all your desired spices & cooking until fragrant.
- STEP 4:
Finally, pour in the red wine and simmer for 2 to 3 minutes. Season with salt and pepper. Remove from the heat and set aside.
Cheesy Yogurt and Basil Topping
- STEP 1:
First, lightly beat eggs in a bowl.
- STEP 2:
Pour in yogurt, cheeses, fresh ground black pepper and flour. Beat well. Store in the fridge until needed.
Moussaka Assembly
- STEP 1:
At first, lightly oil a casserole dish and preheat oven. Then, arrange cooked eggplant slices in the bottom of the casserole dish evenlly.
- STEP 2:
Next, cover eggplant with meat layer and top of it with potato slices. Pour cheesy yogurt and freshly basil on top potatoes.
- STEP 3:
Bake Moussaka for 45 to 50 minutes until top is golden brown. Then, remove from the oven and allow Moussaka to rest for 15 to 20 minutes before serving.
