Swedish Saffron Buns

Ingredients (Serving 12 Portions people):

• 1/2 teaspoon Sun’s Secret Saffron
• 3/4 cup milk
• 2 eggs
• 1 (1/4-ounce) packet active dry yeast
• 1 teaspoon plus 1/4 cup white granulated sugar
• 3 1/2 to 4 cups all-purpose flour
• 1/4 cup sour cream
• 1/2 teaspoon salt
• 1/4 cup (4 tablespoons) unsalted butter, softened
• The seeds from 3 cardamom pods, ground (optional)
• Raisins (Optional)


• 1 egg, beaten

These saffron sweet buns are vibrant yellow and traditionally served at Christmas time in Sweden and Norway as a great sweet dessert with its fresh flavor & magic taste. The Swedes, commonly decorate them with raisins, pearl sugar which doesn’t melt during baking.

Steps to make this especial recipe by the method of Sun’s Secret Kitchen

  • STEP 1:

At first, heat the milk, saffron and 1 teaspoon of sugar together in a pot until the milk is steamy.

Then, remove from heat and stir to dissolve the sugar. Let cool or warm to the touch but not hot.

  • STEP 2:

Sprinkle the yeast over the warm saffron-infused milk and let sit for 5 to 10 minutes until be foamy.

  • STEP 3:

After that, mix & whisk flour, sugar, salt, cardamom.

  • STEP 4:

Next, make a well in the center of the flour and add the yeast milk saffron mixture, the eggs, the butter and the sour cream and mix the whole of ingredients until well incorporated.

  • STEP 5:

At this stage, knead the dough. Do this until the dough is a little sticky to the touch but does not completely stick to your hands when you handle it.

  • STEP 6:

Then, let dough rise and place in a bowl and cover with plastic wrap and let sit in a warm place for 1 to 2 hours until the dough has doubled in size.

  • STEP 7:

After that, form dough into S shapes. When the dough has doubled in size, press it down and knead it a couple of times.

Then, break off a piece and form it into a ball about 2 inches wide and roll the ball out into a snake about 14 inches long.

Next, curl the ends of dough in opposite directions and forming an “S” with spirals at each end and place on a lined baking sheet and repeat with the rest of the dough.

  • STEP 8:

Cover with plastic and place in a warm spot until the dough shapes double in size, about approximately 30 minutes to an hour.

  • STEP 9:

Next, brush with egg wash and place raisins on buns. Using a brush or a pastry brush and brush some beaten egg over the tops and sides of the uncooked buns.

  • STEP 10:

Place in the oven and bake at 400°F for about 10 to 12 minutes until the buns are golden brown.
